After visiting Universal Studios the whole family was obsessed with Butterbeer, and quite honestly, going into Butterbeer withdrawals. So after looking up a bunch of recipes on Pinterest I combined the best to come up with this lovely recipe, makes two glasses. Enjoy!
What you need:
- 1.5 bottle High quality cream soda (I used Virgils)
- 6 Tbls Butterscotch ice cream topping (I used Smuckers)
- 1 tsp. Rum extract
- 1 cup Cool whip (I recommend the regular version, not the light or sugar free)
What you do:
Make the foam topping: whip by hand 3 tablespoons of butterscotch and all the cool whip. Gently stir in 1/2 cup of cream soda to make it light and foamy (you can adjust this to your preference, if you want a denser creamier topping use less soda, if you want it lighter and fluffier use more, not too much more though or it will become soupy).
Get two glasses. In each glass put 1/2 tsp rum extract, 1.5 tablespoons butterscotch (you can adjust the amount of butterscotch and rum flavors to your personal liking) and top off with cream soda. Stir gently. Top with creamy foam topping and a drizzle of butterscotch if you’d like.
